Why this is good for your gut-brain

Oats contain beta-glucan, a soluble fiber that feeds beneficial bacteria and slows digestion so you stay full. Kefir is fermented milk with a wider mix of cultures than most yogurts. Together with berries, this is a simple way to get fiber, polyphenols, and a fermented food in the same bowl. Use certified gluten-free oats if you avoid gluten.

How to cut and prepare

Open a card before you start chopping. The picture shows the shape you are aiming for.

    Rinse berries just before you eat them. If you wash them days ahead they mold faster.

    Put them in a colander and rinse gently under cool water. Don't blast them — raspberries crush easily.

    Spread them on a clean towel and pat dry so they don't water down your yogurt or oats.

Common mistakes

  • Soaking berries in a bowl for a long time. They drink the water and get mushy. A quick rinse is enough.
  • Leaving strawberries whole if they are huge. Hull them (cut out the green cap) and slice so every bite has fruit.

Cook it

You will need: A jar or bowl with a lid, A spoon.

    Stir the base

    In a jar, stir the oats, kefir, yogurt, chia, cinnamon, and honey. The chia and oats both drink liquid. It should look soupy tonight. It will be thick in the morning. Scrape the sides so dry oats do not hide.

    Refrigerate

    Cover and refrigerate at least 6 hours, and up to two nights. Do not leave it on the counter. Kefir is already cultured; the fridge keeps it in the range you want.

    Check the texture

    In the morning, stir. If it is stiffer than you like, splash in a little more kefir. If it is thin, you measured light on the oats — it is still good to eat, just more like a drinkable bowl.

    Add the fruit and nuts

    Rinse and dry the berries. Chop the almonds. Put them on top just before you eat so they stay fresh and crunchy. The honey is already in the base; add another drop only if you want it sweeter.

Make it simpler

  • Make two jars on Sunday. Breakfast is then grab-and-go for two mornings.
  • No kefir this week? Use all Greek yogurt and add a splash of milk so the oats can soften.

Flavor boosters

  • A tablespoon of pumpkin seeds on top.
  • Lemon zest stirred in at night makes the berries taste brighter.

Boosters stay off the grocery list unless you add them yourself.
