Why this is good for your gut-brain

Cottage cheese is a cultured cheese, so it sits with yogurt and kefir as a fermented dairy food, and a full cup is genuinely high in protein. Berries add polyphenols. Pumpkin seeds and walnuts add minerals and a little fiber. It is not a fiber monster — pair it later in the day with a vegetable-heavy dinner if you want more plants.

How to cut and prepare

    Rinse berries just before you eat them. If you wash them days ahead they mold faster.

    Put them in a colander and rinse gently under cool water. Don't blast them — raspberries crush easily.

    Spread them on a clean towel and pat dry so they don't water down your yogurt or oats.

Common mistakes

  • Soaking berries in a bowl for a long time. They drink the water and get mushy. A quick rinse is enough.
  • Leaving strawberries whole if they are huge. Hull them (cut out the green cap) and slice so every bite has fruit.

    Spoon the cottage cheese

    Use a full cup. Low-fat and whole-milk both work. If the tub says fruit-on-the-bottom or has added sugar in the ingredients, pick a different one. You want milk, cream, salt, and cultures.

    Rinse and top

    Rinse the berries and pat them dry. Chop the walnuts roughly. Scatter berries, pumpkin seeds, and walnuts over the cheese. Dust with cinnamon. Eat cold.

Make it simpler

  • Keep a jar of pumpkin seeds and a pint of berries in the house and this becomes a default snack.
  • If berries are out of season, frozen ones thawed and drained are fine.

Flavor boosters

  • A teaspoon of honey if you want it sweeter.
  • A few slices of ripe pear when you have one. That also bumps the fiber.

Boosters stay off the grocery list unless you add them yourself.
